Braised short ribs are the ultimate comfort food — tender, fall-off-the-bone beef in a rich, savory sauce. Ingredients:

4 lbs beef short ribs

½ cup flour

1 tsp kosher salt

½ tsp pepper

2 tsp olive oil

3 tbsp butter, divided

⅓ cup onion, minced

2 carrots, peeled and minced

2 stalks celery, minced

6 cloves garlic, minced

½ cup balsamic vinegar

1 tbsp Worcestershire sauce

1 tbsp liquid smoke

2 cups beef broth

Fresh rosemary, thyme, and bay leaves

Mashed potatoes, for serving

Instructions:

Coat each rib with flour, salt, and pepper.

In a Dutch oven, sear ribs on all sides in olive oil. Remove and set aside.

Melt butter, then add onions, carrots, celery, and garlic. Cook until tender, about 5 minutes.

Sprinkle in flour, stir briefly, then add balsamic vinegar, Worcestershire sauce, liquid smoke, and beef broth. Simmer.

Return ribs to the pot, add herbs, cover, and bake at 350°F for 2½–3 hours until the meat is falling off the bone.

Serve over creamy mashed potatoes, top with microgreens (optional).
